Cucumber tomato dill salad

This one is a spin-off of a salad that my mom always made during the summer time. She would slice some cucumbers into very thin slices, then soak them in vinegar and sugar prior to serving. It was so refreshing to have on a hot summer day. Here's to you Mom, for keeping it simple and delicious.













Ingredients
  • 1 large cucumber, diced
  • 1 cup of cherry tomatoes, sliced
  • 1/4 cup of fresh dill, roughly chopped
  • 1/4 cup of vinegar
  • 1/2 tablespoon of white granulated sugar

Directions
In a small bowl, whisk the vinegar and sugar.

In a large salad bowl, place the cucumbers, tomatoes, and dill. Pour the vinegar and sugar mixture over the vegetables, toss, and let sit for 15 minutes prior to serving.
